This post has been requested for a bit, so here it is!
(The size of each link depends on how much I like the piece. Larger links signify that I enjoy a that certain piece more.)

Recent discoveries include Dance of the Hours, Pomp And Circumstance March No. 1, and this from Carmen.

This video has a lot of great pieces. (Here's another "Top Classical Pieces" video)

By instrument:

Violin—
To be honest, I don’t really know a lot of violin pieces, but I like Paganini’s Caprice 24 and Czardas (other arrangements of this piece include x and x.)

Viola—

Cello—
This is Yo Ma’s rendition of Gabriel’s Oboe.

Double Bass—
The bass is featured in Elephants from the Carnival of the Animals.

Flute—

Oboe—
Gabriel’s Oboe; oboe concertos by [Albinoni], [Mozart], [Marcello], and [Vaughan Williams].

Trumpet—
Hummel’s and Haydn’s trumpet concertos

Piano—

Mandolin—

By Notable Composers:

Mozart: Symphony #25

Tchaikovsky: Serenade for Strings, The Nutcracker (I especially like x and x), 1812 Overture, Capriccio Italien

Grieg: Morning Mood (from the Peer Gynt Suite), In the Hall of the Mountain King, and Symphonic Dance #3 (Here's an orchestral version of all 4 dances)
